Ingredients
– 1 can (400 grs) black beans
– 1 can (400 grs) chickpeas
– 1/2 cup diced red onion
– 2 cups cherry tomatoes (halved)
Dressing:
– 1 clove of garlic, minced
– 3 tbsp lemon juice
– 2 tbsp olive oil
– 1/4 cup chopped basil
– 2 tbsp chopped parsley
– 1 tsp honey
Steps:
1. In a medium bowl, add all dressing ingredients.
2. In another bowl, add the salad ingredients and the dressing.
Optional:
Add feta cheese or avocado
